Slow carb chocolate pudding

Be careful with this one - we are allowed avocado but in limited quantities so don't overdo it with these.

This recipe makes...well the amount that was in the photo.
It wasn't exactly bubbly like a mousse but it had a very nice chocolate pudding sort of taste and texture.

Ingredients

  • 1 ripe avocado
  • 1.5 scoops of chocolate whey protein (I used chocolate mint flavour)
  • Pinch of salt
  • Half a teaspoon of instant coffee
Method
  • Mash the avocado into a smooth paste - lumps look really gruesome in the final product
  • Whisk the whey protein with water into a thick paste, almost syrup-y in texture
  • Add the coffee and the salt to the protein paste and  mix
  • Blend the avocado paste with the protein mixture
  • If it is too thick, add a bit of water to thin it out
  • Enjoy, guilt-free (relatively)!
